Preparing for the Work Week Ahead
So I was looking through some old recipes and came across this one. I also found a short video that I recorded that shows you how to put it together. At the time, I was meal prepping for the family and put together this recipe. It yielded about three meals that I could pack away for work and school lunches or that I could just freeze for later. In this dish, we used couscous. I don't know if people realize how simple it is to make couscous. Literally, there is no cooking required. You boil water, flavor it just right, add couscous, stir and then Voila!
So I am giving you this recipe for the upcoming work week. Always remember, when you prepare anything, organization is the key. If you can pull out the containers you will use right away, it will help you to get to the finish line faster. You can add a very simple salad to each plate that will extend the meal and also add wonderful nutrients.

National Nutrition Month and Seasonal Guide for March
Can you believe that we are already in March? That means that spring is just a few weeks away. I am sharing my seasonal guide for March with you here. It is also National Nutrition Month too. I get excited about these monthly seasonal lists because it is truly an opportunity to play with new ingredients or reimagine familiar ones. You can get excited about some of these beautiful seasonal items that we are featuring this month. I am looking forward to trying some new recipes with some of these items. Are any of these fruits or veggies listed unfamiliar to you? If that's the case, this is a great time to try one new thing this month. It is a good habit to be thinking how you can incorporate more nutrients in your food as well. I would love to hear from you if you there is something on the list that you have not seen before.
