African Peanut Stew w/ Ginger Essential Oil

A year ago around this time, I was in Tallahassee, Florida doing the cooking show, Stirrin' It Up with Chef Beee at a wonderful restaurant called, Nefertari's with a brother by the name of Baba Kamau. We made Nigerian Peanut Stew together and it was just incredible. He said that sometimes they call it African Peanut Stew. I like that name, so I decided to go with it. 

As you may know, I will be heading to Ghana, West Africa this upcoming week and wanted to share this recipe as I begin to prepare for the trip. This recipe, African Peanut Stew, was updated a bit to include an essential oil. I add a few drops of Ginger Essential Oil to this one pot dish and it really makes the dish taste even more amazing. This is my recipe offering to you this week. African Peanut Stew with Ginger Essential Oil


Ingredients for African Peanut Stew

2 Tbs Peanut Butter

2 Tbs Coconut Oil

2 Tbs of Olive Oil

1-2 Cups of Organic Coconut Milk

1/4 Cup Roasted Peanuts

1 Red Pepper, Cut into matchsticks

1 Medium-Sized Onion, Chopped Finely

2 Garlic Cloves, Minced Finely

2 Cups of Kale, Chopped Finely

2 Medium Sized Sweet Potatoes, Chopped Finely

1 Small Can of Organic Tomato Sauce

1-2 Cups of Organic Chickpeas

1 Tsp of Salt

1 Tsp of Black Pepper, Ground

1 Tsp of Cayenne Pepper, Ground

1 Nub of Ginger, Chopped Finely

2 Drops of GINGER Essential Oil

Method for Stew:

In a large pot or large pan, combine all ingredients. Simmer stew until sweet potatoes are tender. Plate and then eat -- It's that simple!
